Ristorante Corbezzoli, located within the Relais Bellaria Hotel in Bologna and led by Chef Giuseppe Tarantino, has once again been awarded the prestigious Cucina Radiosa distinction in the ilGolosario 2027 guide.
A Culinary Journey Between Campanian and Emilian Traditions
Born in Naples and raised in Bologna, Chef Giuseppe Tarantino has developed a distinctive culinary identity over the years, celebrating the rich gastronomic heritage of both regions.
At Ristorante Corbezzoli, his cuisine brings together the culinary traditions of Campania and the authentic flavours of Emilia-Romagna, reimagined through carefully selected ingredients, a strong focus on seasonality, and ongoing experimentation with techniques, cooking methods and flavour combinations.
This philosophy is also reflected in the words of the ilGolosario 2027 guide, which describes the Chef’s approach as seasonal cuisine underpinned by technical expertise, research and thoughtfully balanced creativity.
Among the dishes highlighted in the guide are the three-tomato risotto with 24-month-aged Parmigiano Reggiano PDO, Gragnano spaghetti with wild catchfly extract, Geay oyster and crispy lemon, and caramelised rum babà served with crème anglaise.
Three distinctive creations, united by a meticulous attention to ingredients, flavour pairings and balance, each expressing the culinary vision of the Chef and his kitchen team.
